The Story of Dr. Rub
Domenic Rubolio arrived in America with his family at the age of 10. Back in Italy, his father had told him how wonderful America was, how all your dreams could come true if only you worked hard and believed in yourself. As young Domenic acclimated himself to his new world, he became most fascinated by the sights, sounds and most importantly the tastes of Federal Hill in Providence.
Old Mr. and Mrs. Rossi gave Domenic a job in their restaurant on The Hill. The Rossis had arrived in America a few years earlier than the Rubolios, and their quaint little restaurant was very popular among both the locals and the immigrants coming to the shores of this new land. Domenic made quite an impression upon the Rossis, and soon they began teaching him their secret Italian recipes. Domenic not only learned well, he also began to experiment on his own with the some of the spices and herbs used by other immigrant friends in the Federal Hill area.
As Domenic reached his twenties, he went off and opened his own little cafe in Providence right next to the old city hospital. He decorated “Rubolio’s Cafe” with various medical accessories and had his small staff wear hospital garb, much to the amusement of the patrons. Domenic’s new restaurant proved to be a big hit, and soon the hospital workers began to call him Dr. Rub both for his attire and for his amazing spice and rub concoctions that delighted the palates of his customers.
Neither Rubolio’s Cafe nor the old hospital exist anymore. But the legend of Dr. Rub continues to this day. The rubs and sauces of Domenic Rubolio have now been given new life and passed on to new generations. We hope you enjoy the exotic yet comforting recipes blended by the skills of a true kitchen artisan from Federal Hill.
(All Dr. Rub characters are fictional. That’s right…there was not a real bull with a mohawk that posed in a tight shirt for us. Any resemblance of characters to actual persons, living or dead, is purely coincidental.)
